I’ve decided to set myself some kind of goal each month for 2020. Nothing too stressful – I’m not going to be abseiling off the Gherkin. In fact, kind of the opposite. I want to try simple, stupid things that are new for me. A kind of wellness experiment where I try to find something small to enrich my life each month.
This month, I made ratatouille. Yes, I know it’s not the season. No, I don’t care. I’ve been vegetarian since I was about twelve but I’ve never made this meal – a miserable oversight I wanted to correct. I also need something I can make at the weekend and heat up when I get home from work at stupid-o’clock. And thankfully, this dish worked out really well! 🙂
I got this recipe from Rukmini Iyer’s excellent book, The Green Roasting Tin.
I messed a bit with the recipe and cheated on the ingredients, so I used one courgette, one aubergine, one red onion, one tin of chopped tomatoes, a bit of olive oil, and I totally replaced all the fresh herbs and spices with generous sprinkles of ready-mixed dried Mediterranean herbs. There are breadcrumbs and grated cheese on top, added after half an hour in the oven, making it a kind of gratin, but I swapped parmesan for mixed cheddar and mozzarella – because that’s what I had in the fridge.
Anyway, it turned out really well and holds about three big portions. I had it with fresh wholemeal bread and it was excellent.
Challenge accomplished for January! And it’s only the first week! 🙂
